Sweet & Spicy Pork Belly Burnt Ends

A simple and very tasty snack that will make any party better! WARNING: These will not last long!!!

Equipment

  • 1 Pellet grill or offset smoker or just a grill Use what you have, but you need to cooking indirectly
  • 1 cooking rack
  • 1 aluminum baking pans & foil Disposable ones from the grocery store is fine
  • 1 cooking spray

Ingredients
  

  • 1 Pork belly
  • 1/4 cup standard yellow mustard this is for binding the rub to the pork
  • 1/4 cup Any hot sweet BBQ rub I prefer Killer Hogs rub
  • 1 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup your favorite hot sauce
  • 2-3 tbsp Hot seasoning Frank's Red Hot Seasoning is what I use

Sweet and Sticky Glaze

  • 1/2 cup Brown Sugar
  • 1/2 cup hot sauce
  • 1 tsp sea salt
  • 1-2 tbsp red pepper flakes

Instructions
 

  • Set your BBQ pit to 275 degrees. Use whatever smoke wood or pellets you have. This "can" be done in an oven, but will be better if you use a grill.
  • Take the pork belly and cut it into 1 1/2 inch cube chunks, use mustard to rub all over the pork belly and liberally dust with the hot and sweet BBQ rub.
  • Spray your cooking rack with cooking spray to keep food from sticking. Place the pork belly cubes on the tray. Using indirect heat, cook the pork for 2 hours.
  • In the meantime, combine the ingredients for the glaze and heat up until melted and incorporated. Set aside for later.
  • After 2 hours, remove rack and place pork into the aluminum baking pan. Add brown sugar, the honey, a good amount of hot sauce and the hot seasoning (Frank's).
  • Cover with aluminum foil and place back on the pit for another hour
  • After an hour, remove from your pit and make sure the pork hasn't stuck to the bottom of the pan. Coat with glaze and place back on the pit for the final time for about 5 minutes.
  • After five minutes, the glaze should be good to go and you are ready for a fantastic appetizer.
